The French Fry processing system involves multiple stages: First, raw potatoes are washed, peeled, and cut into strips. The strips are then dried to remove moisture, followed by batter application for even coating. A two-stage frying process is used – Stage A sets the batter and singulates each fry to prevent clumping, while Stage B fries at higher temperature to achieve the crispy, golden exterior while maintaining a fluffy interior. The fries are then frozen, and SAPP/dextrose may be applied to control color and quality of the finished product.
SAPP (Sodium Acid Pyrophosphate) is a food additive typically applied to French Fries or diced potatoes along with dextrose to help control color and maintain quality aspects of the finished product. FPS designs complete SAPP application systems including mixing systems, dosing tanks, dry ingredient handling, hygienic flume and spray delivery systems, dip conveyors, and spray augers. This treatment prevents enzymatic browning and helps maintain the appealing golden color of fried potato products during storage and after cooking.
