A Surprising Leader in the Global French Fries Market.

Have you ever wondered where the heart of French fries production truly lies? Most people immediately think of fast-food giants like McDonald’s or Burger King, or perhaps they envision bustling streets in the United States or Europe. However, the surprising truth is that the capital of French fries is actually found in the Indian state of Gujarat. Just a decade ago, India imported approximately 6,000 metric tonnes of French fries. By 2019, this narrative had completely transformed, as the nation began exporting around 30,000 metric tonnes of frozen potatoes, with 95% of this figure attributed to French fries. This impressive transition from importer to exporter can be largely credited to the concerted efforts of local farmers and innovative companies operating within the state.

An Impressive Transformation

Though Gujarat harvests merely 7.42% of the country’s potato production, the state has singularly catapulted India to becoming a French fries exporter from being an importer in just over a decade. In 2015, India started exporting French fries, with annual exports initially standing at 5,000 metric tonnes. Fast forward to 2020, and the Indian market for frozen potato products grew to a value of USD 1.10 billion. Projections suggest that from 2023 to 2028, this market is expected to increase at a CAGR of 17%, reaching USD 2.82 billion by 2026.

Key Potato Varieties for French Fries Production

Central to Gujarat’s success in the French fries market is the use of specific potato varieties, particularly Santana and Frysona. Among these, Santana is the premium choice, known for its oblong shape, yellow flesh, and uniformity, making it ideal for producing high-quality French fries. The Banaskantha district is India’s largest producer of the Santana variety, which has been instrumental in establishing Gujarat as a key player in the global French fries market.

The Santana variety is preferred for several reasons:

  • Uniform Shape: This characteristic ensures that the fries are consistently cut, making them visually appealing and providing a uniform cooking experience.
  • High-Quality Flesh: The yellow flesh of Santana potatoes contributes to a golden color and rich flavor in the final product, enhancing consumer satisfaction.
  • Export-Quality Standards: The uniformity in size and shape meets the stringent requirements for export, allowing Gujarat to cater to international markets effectively.

Home to Leading Processing Plants

Gujarat is now home to the processing facilities of three major players in the frozen potato market: McCain Foods, Iscon Balaji Foods, and HyFun Foods. These companies not only lead the export of frozen potato products in India but also supply many of the top burger quick-service restaurant (QSR) chains in the country. The establishment of these processing plants has been instrumental in enabling Gujarat to emerge as a hub for French fries production and export.

Strong Cooperation Between Farmers and Processing Companies

The success of Gujarat’s French fries market can also be attributed to the strong cooperation between farmers and food processing companies. This collaboration is facilitated by the state’s robust network of agricultural cooperatives, which have empowered farmers to access necessary resources and support for growing specific potato varieties required for French fries production.

This partnership has created a win-win situation for both parties:

  • Farmers benefit from access to high-quality potato seeds and guaranteed demand for their crops.
  • Processing companies can source the potatoes they need for French fries production at competitive prices.

Favorable Agroclimatic Conditions

One of the primary reasons these companies have chosen Gujarat as their operational base lies in the state’s favorable agroclimatic conditions. The environment in Gujarat is particularly conducive for growing processing varieties of potatoes, ensuring a steady supply of raw materials for processing. Furthermore, the state’s farmers have embraced contract farming, allowing them to cultivate specific potato varieties tailored for French fries production.

The Booming Market for Frozen Potato Products

As India’s French fries exports have surged, the country’s share in the global frozen potato products market has witnessed substantial growth. Projections indicate that this market could reach an estimated USD 2.82 billion by 2026, further emphasizing the significance of Gujarat’s contributions.

Rising Global Demand and Expansion of Fast-Food Chains

The growth of Gujarat’s French fries exports can also be attributed to increasing global demand, particularly from Asian countries that do not cultivate potatoes. These nations have historically depended on imports from Europe and the United States. However, India’s rise as a major player in the French fries market provides them with a more geographically convenient source for this popular snack.

The expansion of fast-food chains such as McDonald’s, Subway, KFC, Burger King, and Dominos has also fueled the growth of the Indian frozen potato products market, significantly contributing to the overall development of the frozen potato sector within the country.

Future Opportunities and Diversification

Gujarat’s success in the French fries market is undoubtedly impressive, but the state’s journey is far from over. There is ample room for growth in the global frozen potato products market, and Gujarat has the potential to further expand its share. As the world’s appetite for French fries continues to grow, the state must continue to invest in its potato processing industry to meet this demand.

This will involve expanding existing processing facilities and developing new ones to increase production capacity. Additionally, there are numerous other frozen potato products that Gujarat could focus on, such as potato wedges, tikkis, mojjos, and sliders. By diversifying its product range, the state can tap into new markets and further strengthen its position in the global frozen potato products industry.
