Gujarat Leads India in Processed Potato Production and Export
Gujarat has firmly established itself as India’s foremost state in both the production and export of processed potatoes. The state’s robust potato sector achieved a total potato production of 48.59 lakh tonnes in the 2024–25 season, with an estimated significant 25% of this volume dedicated to the processed potato segment. This impressive output includes specialized varieties cultivated for popular products such as French fries and wafers.
The state’s dominance in processed potatoes is evident, surpassing other major agricultural states like Uttar Pradesh and Punjab. Gujarat’s processed potato segment not only accounts for over a quarter of its total potato yield but also shows a clear preference in its end-use: approximately 60% of the processed output is channeled into wafer production, while the remaining 40% is utilized for French fries. Beyond the processed varieties, the state also cultivates table varieties developed by CPRI, which are commonly used for household cooking. The growth trajectory in this sector is remarkable; officials note that India’s processed potato production has surged from less than 1 lakh tonnes across 4,000 hectares in 2004–2005 to an astounding 11.50 lakh tonnes cultivated over 37,000 hectares by 2024–25, representing a tenfold increase in production and a ninefold expansion in cultivation area.
Leading the charge in potato cultivation within Gujarat are the districts of Banaskantha, Sabarkantha, and Aravalli. These three northern districts collectively produced a massive 38 lakh tonnes of potatoes in the 2024–25 season, spanning 1.19 lakh hectares with an average productivity of 32.36 tonnes per hectare.
Banaskantha stands out as the highest producer, contributing 18.70 lakh tonnes from 61,016 hectares in 2024–25, with a productivity rate of 30.65 tonnes per hectare. The district has consistently shown strong performance, with 15.62 lakh tonnes produced in 2023–24 and 15.79 lakh tonnes in 2022–23. Following closely, Sabarkantha recorded a production of 12.97 lakh tonnes in 2024–25 from 37,999 hectares, boasting a higher productivity of 34.13 tonnes per hectare. Aravalli district contributed 6.99 lakh tonnes from 20,515 hectares, with a productivity rate of 34.05 tonnes per hectare.
Gujarat cultivates specific processing-grade potato varieties such as Lady Rosetta, Kufri Chipsona, and Santana. These specialized varieties are crucial for supplying major frozen food processors and quick-service restaurants. Furthermore, Gujarat’s processed potato products are a significant export commodity, primarily destined for Middle Eastern countries. To support this extensive supply chain, the northern districts—Banaskantha, Sabarkantha, and Aravalli—are well-equipped with cold storage facilities, ensuring the quality and availability of processed potato products.
Gujarat’s strategic focus on processed potato cultivation, coupled with robust infrastructure and high-yield varieties, has solidified its position as a national leader and a key player in the global potato market.
